Corn Casserole

This is comfort food at its best, simple and satisfying. It works well as side dish, or as a meal all by itself. For a full meal you can dice ham into it, for example, and have a salad.

4T butter (or less if you wish)
1 15 oz can whole corn
1 15 oz can creamed corn
1 c uncooked (dry) elbow macaroni
1+ c shredded sharp cheddar cheese
1T dried minced onion

Melt butter in a baking dish. I usually have a 8-9 inch round dish, but anything about an 8×8 dish is good. Drain the whole corn leaving just a touch or moister. When butter is melted add whole corn, creamed corn, dry macaroni, and onion. Mix together. Add shredded cheese in batches and mix.

Bake about 35 minutes covered at 350 degrees. Uncover and cook for another 15-20 minutes.

Works great with your favorite hot sauce too!
